Production technology:
The best red grapes are selected, lightly pressed immediately after harvesting and immediately placed in an autoclave where slow cold fermentation with the addition of yeasts selected, makes this Rosé Sparkling Wine particularly delicate and pleasant.
The subsequent minimum aging on the yeasts for 12 months gives it body and structure.
Organoleptic characteristics:
Coral pink color with fine bubbles and persistent perlage.
Fruity aroma with notes of red fruits and pink grapefruit.
In the mouth it is dry, lively with good acidity.
Food pairings:
Aperitifs, cured cured meats, stuffed pasta, grilled fish, white meats, fresh or medium-aged cheeses.
